Chickpea Soup for big family

Cheakpeas soup

Chickpeas are a great source of protein. A 1/2 cup of chickpeas has the same amount of protein as 1 ounce of meat (which is 7 grams of protein). Chickpeas aren’t just mostly protein like a piece of chicken or steak, they also have complex carbs, some healthy fats and lots of fiber, vitamins and minerals.

Ingredients:

  • 1/2 onion, chopped
  • 3 cloves garlic, chopped
  • 2-3 carrots, peeled and chopped
  • 3-4 celery stalks, chopped
  • 4 1/2 cups cooked chickpeas
  • 5 cups vegetable broth
  • 2-3 sprigs of fresh rosemary
  • 2 bay leaves
  • 2 teaspoon dried thyme
  • 1 teaspoon dried sage

Method:

In the vegetable broth boil the carrots and celery over low heat along with the bay leaf and garlic. Remove from the pan a bay leaf and garlic, add the cooked chickpeas, onions and herbs. Make soup in a blender. Serve warm.
